South Tyrolean Speck – air-dried and lightly smoked

Nestled among the mountains of South Tyrol, where crisp Alpine air meets Mediterranean lightness, our Merafino South Tyrolean Speck PGI is produced:

We produce all of our ham specialties directly in Italy according to traditional family recipes and enhance them with the herbs and spices typical of our region. For production, we select only lean ham shanks of the finest quality. These are seasoned by hand with sea salt, juniper, rosemary, and bay leaves before being allowed to cure very slowly in cool rooms.

We then gently cure the South Tyrolean speck in the cold smoke of low-resin beech wood—a crucial step that gives it its delicately savory, mild flavor. The speck reaches perfection during its aging in the crisp Alpine air of the Vinschgau Valley. Here, in the heart of South Tyrol, the process is accompanied by the natural formation of noble mold. We affectionately call this delicate coating the “flower of the speck.”

The Protected Geographical Indication “Südtiroler Speck g.g.A.” is reserved for a very special product: It may only be produced within the territory of the Autonomous Province of Bolzano in South Tyrol and must comply with strictly defined, traditional guidelines.
