The story of Merano Speck doesn’t begin in the idyllic mountains of South Tyrol, but in the heart of the Ruhr region: in Essen. That’s where Albert Rauch, the founder of our family business, lived and worked. As a true native of the Ruhr region, Albert was down-to-earth, pragmatic, and had an unerring sense of quality. But his greatest passion kept drawing him back to the mountains time and again.
Even on his very first visit to South Tyrol, Albert Rauch was completely captivated. The majestic Dolomites, the crisp Alpine air, and the harmonious blend of untamed nature and rural traditions left a lasting impression on him. He was particularly impressed by the people’s genuine, nature-loving way of life—and, of course, by the traditional speck. A product that, like no other, embodied what he valued: patience, craftsmanship, and pure enjoyment.

Albert Rauch said at the time with a twinkle in his eye. What started as a vacation idea became his life’s work. The goal: the finest South Tyrolean speck—Mediterranean-inspired, light in the Italian style, and traditionally seasoned. Gently cold-smoked over beech wood and aged for at least 22 weeks in the fresh mountain air. Just as it has been passed down for centuries.
Over the decades, the Rauch family has put down deep roots in South Tyrol—both in business and in their personal lives.
“We’ve often vacationed here with our five children and gone hiking in the mountains. The deep-rooted traditions and, of course, the incomparable flavor of the bacon enchanted us from the very first moment.”
recalls owner Inge Rauch. Today, Inge Rauch, together with her son Ingmar Fritz Rauch, her daughter Martina-Lina Rauch-Hauf, and the team led by Franz Staffler, Lukas Spada, and Raffaele Avoledo, continues Albert Rauch’s life’s work with exactly the same dedication. With deep respect for the craft and the knowledge passed down from his father, he is leading the company into the future. He combines the tried-and-true methods of the past with modern, sustainable approaches to achieve contemporary finishing of the very highest standard.
